Centered on guinea fowl dishes, we welcome you with cuisine that makes the most of local ingredients —
sashimi of iwana char and itou (a legendary fish), wild mountain vegetables, and mushrooms.

Guinea fowl in particular is lean and delicate, and we are confident you will be satisfied by its flavor. The menu changes with the seasons — wild vegetables in spring, mushrooms in autumn. Please enjoy the mountains’ seasonal bounty.

Simmered in plenty of broth together with local vegetables. Lean guinea fowl is at its best cooked only briefly — do not let it overboil. Delicate yet refined in flavor, it is a pleasure unique to Kyounso.
