Cuisine

Centered on guinea fowl dishes, we welcome you with cuisine that makes the most of local ingredients —
sashimi of iwana char and itou (a legendary fish), wild mountain vegetables, and mushrooms.

Dishes of the Ichi-no-zen dinner course

Ichi-no-zen (Dinner)

Guinea fowl in particular is lean and delicate, and we are confident you will be satisfied by its flavor. The menu changes with the seasons — wild vegetables in spring, mushrooms in autumn. Please enjoy the mountains’ seasonal bounty.

Additional Dishes (Ni-no-zen)

Alongside the guinea fowl hot pot, we offer ceramic-plate-grilled Tankaku beef from Iwate. Raised on pastures in rich natural surroundings, Tankaku wagyu is fine lean beef with little fat and excellent flavor — the more you chew, the better it tastes.

Guinea fowl hot pot (serves 2–3)

Guinea Fowl Hot Pot

Serves 2–3 / ¥4,950 (tax incl.)

Simmered in plenty of broth together with local vegetables. Lean guinea fowl is at its best cooked only briefly — do not let it overboil. Delicate yet refined in flavor, it is a pleasure unique to Kyounso.

Iwana bone sake

Iwana Bone Sake (Kotsuzake)

2 gō (approx. 360 ml) / ¥1,870 (tax incl.)

Sake infused with the essence of grilled iwana char — an exquisite taste. Just the right degree of grilling brings out its flavor, with a uniquely mellow aroma that soothes and warms in the cold season.
